Ingredients
- 2 chicken breasts (or thighs)
- 1 lemon (zest + juice)
- 2 cloves garlic, minced
- 1 tbsp chopped parsley (or mixed herbs)
- 1–2 tbsp olive oil
- Salt & freshly ground black pepper
Method
- In a bowl, mix lemon zest/juice, garlic, herbs, olive oil, salt, and pepper.
- Add chicken and coat well. Marinate 10–30 minutes.
- Heat a skillet over medium-high; cook chicken 5–6 minutes per side until done.
- Rest 2 minutes. Serve with couscous, rice, or salad.
